Amy Owen’s Cheesecake Cupcakes
Filling:
1 8 oz. cream cheese, softened
1 c. semi-sweet chocolate chips
1/3 c. sugar
1 egg
Mix the above ingredients together. Set aside.
Cupcake Batter:
3 c. flour
2 c. sugar
2 eggs
1 c. oil
½ c. cocoa
2 tsp. baking soda
½ tsp. salt
1 c. sour milk (sour with 1tsp. vinegar)
1 c. hot water
Put all batter ingredients in mixing bowl except hot water. Beat thoroughly and then add water. Beat again.Fill muffin tin 2/3 full with batter and put 1 tsp. filling in the middle.
Bake 350 degrees for 20 minutes.
